Wet into wet
When ink and water meet on damp paper, they paint a little by themselves. You can find gestural watercolors in ink for sale here if you like pictures that hover between control and chance.
Once a sheet is dampened, every drop of ink opens into a bloom with feathered edges. From there the painter only steers, by tilting the sheet or pulling with the brush. The gradients that result are ones no plan alone would have produced.

Paper, cockling, frame
Moisture makes paper cockle, which is why good sheets are stretched or unusually heavy. A mat with air behind it keeps the surface calm. Hang the piece away from strong sun so the delicate edge lines do not shift over time.
Hanging sheets so they can change
Watercolor sheets are light and easy to swap. Use clip frames with a mat and pick a wall section that gets no direct sunlight. The delicate ink edges then stay lively for a long time, and you can rearrange the hanging whenever you like.
